Bikini Recipe
Serves 10 people
For the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (produces 850ml, serving 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch
Method
For the Citrus Syrup: Place all the ingredients into a pan, heat until it reaches a gentle boil, stirring so the sugar melts. Then, remove from the heat allowing it to reach room temperature fully. Decant into a clean bottle, close it and refrigerate it chilled, it will last for around four weeks.
For the Cocktail Base: Pour the specified liquids into a large bottle, let it rest for an hour, then strain preferably using cheesecloth, making it fully clarified.
When ready to serve: Add 85ml from the premix into your stirring glass filled with ice, and agitate carefully for about 60 seconds until cold. Pour to a cold coupe glass or a similar vessel, decorate with a few cranberries and complete it using a light spray with the mandarin essence over the drink.
